Tasting Note

Red cherry, raspberry and dark-plum fruit with earthy, leather and spice notes. Silky entry developing firm, velvety tannins, balanced acidity and a savory, slightly tobacco-tinged finish (elegant yet powerful).


Food Pairing

Western: roast beef, beef bourguignon, roasted duck, mushroom risotto, grilled venison. Asian: beef and broccoli, char siu (barbecue pork), duck with hoisin, miso-glazed fish, mushroom-based ramen or soy-braised dishes.


Production Method

Hand-harvested Pinot Noir; cold soak followed by fermentation in stainless steel and/or oak vats with a combination of pump-over and punch-down; aged ~12 months in French oak (around 25–30% new).


Vineyard Info

Domaine Xavier Monnot (Meursault) is a family estate run by Xavier Monnot since 1994, ~17 ha across the Côte de Beaune. Les Vignots is a south-facing lieu-dit above Pommard with many older vines (1950s plantings in part).
