Tasting Note

Perfumed white flowers, lime, white peach and nashi pear with vanilla, toasted almond and smoky mineral notes; bright citrus acidity, chalky minerality and a long, creamy finish.

Western: lobster, scallops, crab, roasted chicken, foie gras, mushroom risotto. Asian: miso-glazed black cod, tempura prawns, richer sushi (toro), steamed dim sum.


Production Method

Hand-harvested Chardonnay; fermented and aged in French oak, élevage ~12–14 months with roughly 15–20% new oak; low-intervention cellar work.
