Tasting Note
Concentrated blackcurrant, dark cherry and cassis with violet and mint/sage notes; cedar, dark chocolate and espresso oak character. Fine grainy tannins, bright acidity and a long, savory finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef short ribs, aged cheddar. Asian: Korean BBQ, char siu (Cantonese roast pork), Peking duck, Sichuan beef, miso-glazed eggplant.
Production Method
Made from the top ~1% estate Cabernet parcels; hand/optically sorted, open fermenters, ~24 days on skins. Matured ~15 months in French oak (c.35% new), malolactic in barrel.
