Tasting Note

Dense blackberry and blueberry fruit with dark chocolate, espresso and warm spice. Velvety, concentrated palate, fine-grained tannins and a long, lingering chocolate-berry finish.

Roast lamb, grilled ribeye or venison and aged hard cheeses (western); Korean BBQ/bulgogi, Cantonese char siu or spicy Sichuan beef (asian).


Production Method

Hand-harvested Shiraz crushed and destemmed, small-batch open fermentations; pressed and matured ~18–22 months in new and seasoned French oak barriques before final assemblage.
