Tasting Note
Bright citrus and tropical aromatics (lime, passionfruit, guava) with lemongrass and kaffir-lime leaf. Zippy, mouthwatering acidity, saline/mineral edge and a clean, dry finish with subtle stone-fruit notes.

Western: oysters, ceviche, grilled snapper, goat-cheese or feta salads, lemon-herb pasta. Asian: sashimi/sushi, Thai/ Vietnamese lime-chili prawn dishes, steamed fish with ginger and soy, green papaya salad.
Production Method
Hand- and machine-harvested parcels are cool-pressed and fermented at low temperatures, primarily in stainless steel with limited lees contact to preserve aromatics; bottled under screwcap.
