Tasting Note
Rich, brooding aromatics of dark berries and subtle earth. Layered palate of ripe cherry, spice and savoury notes with bright acidity and fine, silky tannins; medium-length finish.
Food Pairing
Western: roast lamb, duck, pork belly, seared tuna, mushroom risotto. Asian: char siu or hoisin duck, teriyaki salmon, miso-glazed eggplant, mushroom stir-fry, sushi with richer fish.
Production Method
Fruit cold-soaked, fermented with selected and wild yeasts, basket-pressed; matured approx. 14 months in French oak barriques with malolactic fermentation; egg-white fined and filtered.
