Savory sous‑bois and forest‑floor aromatics with pomegranate, plum and blueberry; bright coastal acidity, dusty, firm tannins and a long, spicy finish with bittersweet chocolate notes.

Western: roast duck, mushroom risotto, grilled salmon, pork tenderloin. Asian: Peking duck, miso‑glazed black cod, teriyaki salmon, char siu pork, shiitake soba noodles.


Production Method

Small‑lot fermentations (≈25% whole clusters), matured 11 months in French oak (42% new). Hand‑harvested coastal fruit, careful sorting and barrel aging for structure.
