Tasting Note
Crisp green apple, lemon and white flowers with wet stone, oyster-shell minerality and saline finish. Medium–full, satiny texture, racy acidity and concentrated core leading to a long, precise finish.

Oysters, scallops, grilled or buttered lobster, creamy shellfish pasta; roast chicken with lemon butter; sushi, sashimi, tempura, miso-glazed fish, steamed white fish with ginger and scallions.
Production Method
Hand-harvested; gentle pneumatic pressing; gravity-fed cellar. Fermented in older French oak and stainless steel; 13–14 months élevage with 40–50% in used French oak barrels and 5–6 months on fine lees. Natural fermentations and malolactic encouraged.
