Elegant medium-bodied Pinot Noir with dark cherry and wild red-fruit core, earth, fennel seed and roasted star anise, subtle cedar/oak, silky tannins and a long mineral-spiced finish.
Food Pairing
Western: roast duck, pork loin, mushroom risotto, charcuterie and soft cheeses. Asian: duck pancakes, hoisin pork, seared tuna, mushroom-based Chinese/Thai dishes, umami-rich noodle bowls.
Production Method
Hand-harvested fruit, minimal-intervention winemaking with native-yeast ferments, gentle maceration and maturation in older French oak; often bottled unfined/unfiltered; organic/biodynamic vineyard practices.
