Tasting Note
Aromatic cherry and red-berry core with earthy terracotta, potpourri and spice notes; silky texture, fine persistent tannins and a savoury, mineral finish with good length.

Western: roast duck, roast lamb, mushroom risotto, roast chicken, charcuterie. Asian: Peking or hoisin duck, char siu pork, miso-glazed salmon, teriyaki dishes, shiitake-based ramen or braised eggplant with soy-miso.
Production Method
Mostly whole-berry/whole-bunch fermentation with native yeasts in open wooden/stainless vats; ~30 days on skins, pressed and matured about 10 months in French oak (≈10% new); minimal sulphur, unfined/unfiltered.
