Tasting Note
Bright red and black fruits (cherry, raspberry, blackcurrant) with violet florals, savory earth, subtle oak spice and fine, persistent tannins. Bright acidity, medium body and a long savory finish.

Production Method
Destemmed whole berries to open wooden/stainless fermenters; wild yeast fermentation, ~30 days on skins; pressed and matured ~10 months in French oak & acacia (10–20% new); minimal sulphur, unfined/unfiltered.
