Bright red cherry, raspberry and strawberry fruits with violet florals, fresh herb and gentle spice; light-to-medium body, lively acidity, polished fine tannins and a mineral-earth finish.

Production Method
Fruit is destemmed (not crushed) and fermented on skins with ambient/native yeasts in open fermenters; minimal intervention (no punchdowns/pumpovers), ~3 weeks on skins, pressed to stainless steel for malolactic, lightly sulphured and bottled often unfiltered/unfined.
