Tasting Note
Aged, perfumed Vintage Port: concentrated black cherry and fig, violet and mint topnotes, layers of tobacco, dark chocolate, toffee and leather, with roasted walnut and tea-like tertiary aromas; silky, mouth-coating tannins, sweet core and a very long, balanced finish.
Food Pairing
Western: blue and aged cheeses, dark chocolate, roast lamb, venison and nutty desserts. Asian: Peking duck, char siu (barbecue pork), Chinese red-braised pork, Malaysian/Indonesian rendang, sesame or red-bean sweets.
Production Method
Fermented then fortified with grape spirit (aguardente) to stop fermentation; matured in large oak vats and cellars in Vila Nova de Gaia, bottled after extended cellar ageing.
