Tasting Note
Intensely concentrated and floral: violets, rose, lavender, blackberries, plum and a hint of mango with minty, resinous cistus notes. Silky yet firm fine-grained tannins, fresh acidity and a long, mineral-driven finish.
Food Pairing
Western: blue cheese (Stilton), aged cheddar, dark chocolate, berry tarts, almond tart. Asian: Peking/roast duck, char siu (roast pork), red‑cooked (hong shao) pork belly, sesame/black‑sugar desserts.
Production Method
Co‑fermented old‑vine field blend; fermentation stopped by addition of neutral grape spirit; matured ~18 months in seasoned oak vats; bottled unfiltered (May 2022).

Warre’s (Symington Family Estates) produced this 350th‑anniversary limited release from 80–100 year old vines at Quinta da Cavadinha and Quinta do Retiro; only ~2,400 bottles.
