Tasting Note
Deep, dark red with aromas of blackcurrant, plum, violets, spice and cedar. Palate shows concentrated blackberry, black cherry and liquorice with Christmas-pudding warmth, refined schist tannins, fresh acidity and a long, warming sweet finish.
Food Pairing
Western: Stilton/blue cheese, mature cheddar, dark chocolate desserts, fruit cake, roast lamb; Asian: Peking duck, char siu (Cantonese BBQ pork), hoisin‑glazed duck/pork, spiced Sichuan beef, sticky rice and dried-fruit desserts.
Production Method
Traditional LBV: fermented and fortified, matured roughly four years in oak, bottled unfiltered and then bottle‑matured for several years in Warre’s lodges prior to release; no fining or filtration.
