Tasting Note

Perfumed red and black fruits, violet and floral notes, tobacco, sandalwood and pencil lead; vibrant acidity, silky ripe tannins, mineral backbone and a long, elegant finish.

Roast lamb, grilled steak, aged Manchego, beef stew; Asian: Korean BBQ (bulgogi), Peking duck, char siu, spicy Sichuan beef.


Production Method

Hand-harvested, destemmed, fermented in stainless steel with controlled temps, malolactic fermentation, ~11–12 months in French oak barriques (c.20–25% new), small portion in concrete eggs/terracotta; fined with egg white.

Bodega Vivaltus is a Yllera-family project with Jean‑Claude Berrouet as consultant; vineyards include old Tempranillo vines up to ~90 years at 750–1000m altitude in Ribera del Duero.
