Tasting Note
Mulberry and blackcurrant fruit with lavender and black pepper notes. Crushed blackberry, clove and a hint of burnt orange peel; juicy, fresh and medium-bodied with gentle chalky tannins and a clean, lingering finish.
Food Pairing
Western: roast lamb, beef short ribs, barbecued pork, aged cheddar. Asian: Peking duck, char siu, Korean BBQ beef, spicy Sichuan or hoisin-glazed dishes.
Production Method
Small-batch Adelaide Hills fruit; ~10% whole-bunch inclusion, ~10-day skin ferment, malolactic fermentation then ~12–15 months ageing in French oak puncheons/hogsheads (portion new). Screwcap closure.
