Tasting Note
Concentrated blackcurrant, plum and dark berry fruit with cigar box, cocoa, mint and subtle smoked/char notes. Velvety, fine-grained tannins, fresh acidity and a long, precise cassis-tinged finish.

Food Pairing
Grilled ribeye, roast lamb, beef short ribs, aged cheddar, wild mushroom risotto; Asian: Korean BBQ (bulgogi), char siu, Peking duck, spicy Szechuan beef.

Production Method
Fermented in stainless steel, concrete and tronconic vats; aged ~22 months in French oak (≈75% new) and >25% in Stockinger foudres; gentle extraction used.
