Tasting Note
Concentrated blackcurrant and dark berry fruit with black licorice, tobacco and cedar. Full-bodied, polished yet chewy tannins, vibrant acidity and a long, elegant finish.

Western: grilled ribeye, roast lamb, beef short ribs, aged Manchego or Parmesan. Asian: Korean BBQ (bulgogi, galbi), Cantonese roast duck, Sichuan beef, Japanese wagyu yakiniku.

Production Method
Hand‑harvested fruit; small‑batch fermentation in stainless steel and concrete vats; malolactic in oak; ~22 months maturation in new barriques and large Stockinger foudres.
