Tasting Note
Deep purple. Intense violets, cassis and red berries with cocoa, coffee and spice. Fresh acidity, fine-grained chalky tannins, layered dark chocolate and persistent, elegant finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged Manchego or cheddar. Asian: Korean BBQ (bulgogi), char siu, Peking duck, Sichuan beef or spicy lamb skewers.
Production Method
Fermented in stainless steel and concrete vats; aged 22 months (≈80% new French oak barriques, 20% in Stockinger foudres); small Petit Verdot co‑ferment.
