Concentrated, precise Cabernet: dark blackcurrant, ripe plum, cigar box, cocoa, charcoal, grilled meat and subtle mint. Ultra-fine tannins, velvety texture, bright freshness and a long cassis-tinged finish.
Food Pairing
Western: grilled ribeye, roast lamb, beef short ribs, aged hard cheeses. Asian: Korean BBQ (bulgogi/galbi), Chinese red-braised beef or char siu, Japanese yakiniku, Sichuan-style beef dishes.
Production Method
100% Cabernet Sauvignon; fermented in stainless steel and concrete/troncoconic vats. Aged 22 months—~75% new French oak barrels, ~25% in Stockinger foudres. Softer extraction and controlled fermentation temperatures to preserve freshness.
