Tasting Note

Concentrated blackcurrant, sour cherry, violet and herbal notes with cedar and dark chocolate; silky fine tannins, fresh acidity and a very long, layered finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised beef, aged hard cheeses. Asian: Korean BBQ (galbi/bulgogi), Peking duck, Cantonese char siu, Sichuan-style beef.


Production Method

Fermented in stainless steel and concrete vats; aged 22 months (≈80% new French oak barriques, 20% Stockinger foudres).
