Tasting Note
Concentrated blackcurrant and red-plum fruit with cassis, cedar, dark chocolate, white pepper and menthol notes. Full-bodied, silky yet gripping tannins, bright acidity and a long, polished finish.
Food Pairing
Western: grilled ribeye, roast lamb, braised short ribs, aged cheeses. Asian: Korean BBQ (galbi/bulgogi), char siu, Peking duck, Sichuan-style beef.
Production Method
Hand-harvested Cabernet with earlier picking in warm 2017; small-lot fermentation, aged ~22 months in French oak (≈80% new) with some large foudres.
