Tasting Note

Black currant, blackberry, cedar, cigar-box, ash and spice. Dense yet elegant with a juicy core, refined but present tannins and a long, saline-tinged finish.


Food Pairing

Western: roast lamb, grilled ribeye, braised short ribs, aged cheddar, mushroom ragout. Asian: Korean BBQ (bulgogi), char siu, Peking duck, miso-glazed eggplant, Sichuan-style beef.


Production Method

Hand-harvested Cabernet; slow ripening from a cool 2006 season; aged ~18 months in new French oak; bottled early 2008.
