Tasting Note
Ripe cherry and red fruits with herbal, cola and licorice notes; silky, creamy texture, subtle oak and whole-bunch spice, firm yet fine tannins and a slightly stemmy finish.

Food Pairing
Western: roast duck, lamb, beef, charcuterie, mushroom risotto, aged cheeses. Asian: Peking duck, char siu, Korean BBQ, soy-glazed pork, mushroom hot pot.

Production Method
Hand-harvested, whole-bunch (vendanges entières) fermentation with indigenous yeasts; low-intervention/biodynamic viticulture; ~18 months in used oak barrels; minimal sulphur, usually unfiltered.
