Tasting Note
Aromas of cherry, raspberry and strawberry with floral, spicy and minty notes. Chalky, velvety palate with juicy red fruit, integrated oak and a fine bitter-savoury finish; long, refined aftertaste.
Food Pairing
Western: roast lamb, duck à l'orange, mushroom risotto, charcuterie, grilled pork. Asian: Peking duck, char siu, teriyaki salmon, Korean BBQ (bulgogi), shiitake stir-fries.
Production Method
Hand-harvested Pinot Noir on clay-limestone soils; organic/biodynamic viticulture, indigenous yeasts; aged 11–18 months (about 2/3 in barrels, 1/3 in wooden vats), some new/1st-fill oak.
