Tasting Note

Crisp citrus, pear and white peach with pineapple hints, chalky/ flinty minerality, subtle lees creaminess and faint toast. Precise acidity, saline finish and fine-textured mouthfeel.


Food Pairing

Western: oysters, scallops, grilled/poached white fish, crab, ceviche, goat cheese (Crottin de Chavignol), light risottos. Asian: sushi/sashimi, Vietnamese spring rolls, steamed fish with ginger & scallions, milder Thai green curry, yuzu ceviche-style dishes.


Production Method

Hand-harvested; whole-bunch pneumatic pressing; cool, slow fermentation (indigenous yeasts, ~4 weeks); aged 7–11 months on fine lees in stainless tanks, demi-muids and older barrels; minimal SO2; organic/biodynamic practices.

Domaine Vincent Pinard (Bué) — family estate now led by brothers Florent and Clément Pinard. ~17 ha (majority Sauvignon Blanc), organic/biodynamic farming, high-density plantings and focus on caillottes limestone terroir.
