Tasting Note
Crisp citrus, pear and white peach with pineapple hints, chalky/ flinty minerality, subtle lees creaminess and faint toast. Precise acidity, saline finish and fine-textured mouthfeel.

Production Method
Hand-harvested; whole-bunch pneumatic pressing; cool, slow fermentation (indigenous yeasts, ~4 weeks); aged 7–11 months on fine lees in stainless tanks, demi-muids and older barrels; minimal SO2; organic/biodynamic practices.
