Tasting Note

Crisp, citrus-driven Sancerre: tangerine and confit citrus, pear and delicate white stone fruit, honeysuckle and chalky wet‑stone minerality, subtle spice and lees creaminess; bright acidity and a long citrus‑driven finish.

Fresh oysters, goat cheese (chèvre), grilled or roasted fish (sole, trout), scallops, sushi and sashimi, tempura, citrusy seafood ceviche, Asian yuzu‑dressed tartare, light poultry dishes.


Production Method

Hand‑harvested Sauvignon Blanc; fermented with indigenous yeasts and aged ~11–13 months (two‑thirds in 600L demi‑muids/new oak, one‑third in large wooden vats), extended lees contact, minimal filtration. Organic/biodynamic practices in place.
