Tasting Note
Bright citrus and elderflower with pear, quince and a chalky, saline minerality. Rounded, supple palate with mouthwatering acidity, subtle oak spice and a persistent, finely textured finish.

Production Method
Hand-harvested; organic/biodynamic viticulture; pneumatic pressing; indigenous yeasts; fermented and aged 10–12 months two-thirds in 600L demi-muids and one-third in large wooden vats/on lees; minimal SO2.
