Tasting Note
Fresh citrus (lemon, grapefruit), white pear and quince with white flowers, herbal/verbena hints, pronounced flinty minerality and saline texture; subtle oak spice and a long, precise finish.

Western: Chavignol goat cheese, oysters, scallops, grilled white fish, lobster, chicken in cream sauce. Asian: moules au curry, Thai fish curry, sushi/sashimi, Vietnamese spring rolls, wasabi prawns.

Production Method
Organic/biodynamic viticulture; hand-harvested Sauvignon; fermented on indigenous yeasts and matured 10–12 months in 2/3 demi-muids and 1/3 wooden vats with minimal intervention.
