Tasting Note

Crisp, citrus-driven Sauvignon Blanc with green apple, pear, white flowers, flinty chalk minerality and a saline finish; 2021 shows a touch of creaminess from malolactic, with bright acidity and medium body.

Western: fresh goat cheese (chèvre), oysters, scallops, ceviche, grilled white fish, roast chicken. Asian: sushi/sashimi, Vietnamese seafood salad, Thai herb-driven fish dishes, light Chinese seafood stir-fries.


Production Method

Hand-harvested, low-intervention vinification with indigenous yeasts; partial oak fermentation/ageing and lees contact; 2021 underwent malolactic conversion. (Mix of stainless steel and large oak vessels).
