Tasting Note
Crisp citrus and green apple with white flowers, chalky minerality and saline lift. Gentle lees and light oak add texture; clean, focused acidity and a stony finish.

Food Pairing
Western: oysters, grilled white fish, goat cheese, roast chicken, creamy seafood pasta. Asian: sushi/sashimi, steamed fish with ginger & scallions, Vietnamese spring rolls, lightly spiced Thai seafood salads.

Production Method
Organically farmed (biodynamic-certified), native-yeast fermentation in a mix of stainless steel and large/old oak demi-muids, aged on lees for several months.
