Tasting Note
Medium-bodied Pinot Noir: red cherry, raspberry, fresh earth, forest floor and subtle dark chocolate/tobacco notes. Silky texture with ripe, fine tannins and a gently savory finish.

Western: roast duck, coq au vin, beef bourguignon, mushroom risotto, aged soft cheeses. Asian: Cantonese roast pork/char siu, teriyaki chicken, mushroom hotpot, Korean BBQ (pork/beef), shiitake-based dishes.
Production Method
Hand-harvested. Indigenous-yeast fermentation in concrete/steel vats with gentle extraction; matured ~12 months in French oak (approx. 30–45% new), then rested in tank before bottling.
