Tasting Note
Yellow-gold Chardonnay: citrus zest, orchard and stone fruit (apple/pear/peach), honeyed almond and toasted hazelnut, light butter and flinty minerality; medium-bodied with fresh acidity and a saline, long finish.
Food Pairing
Shellfish and crustaceans, grilled or roasted white fish (salmon), creamy poultry or pasta, soft sheep/goat cheeses; Asian: Vietnamese spring rolls, steamed fish with ginger-soy, mild sushi and light Cantonese seafood dishes.
Production Method
Hand-harvested Chardonnay from Santenay parcels grown with organic/biodynamic practices; fermented in a mix of stainless steel and oak barrels, partial malolactic and aged on lees ~6–8 months in barriques (some new) for texture.
