Tasting Note
Ripe orchard and citrus fruit with toasted oak, brioche and mineral chalk notes; silky, broad palate with balanced acidity and a long, slightly spicy finish.

Food Pairing
Western: roast chicken with cream sauce, lobster thermidor, mushroom risotto, aged Comté. Asian: miso-glazed black cod, seared tuna/sushi, tempura prawns, creamy Thai or Malaysian coconut-based seafood dishes.

Production Method
Hand-harvested Chardonnay; fermented with native yeasts in stainless steel and/or oak, partial malolactic fermentation; aged 10–16 months on fine lees in oak (some new) with light bâtonnage.
