Tasting Note

A medium-bodied Pinot Noir with poached plum, black cherry, cassis and raspberry, earth and forest-floor notes; fleshy and juicy with fine structure and a mildly austere, balanced finish.


Food Pairing

Western: roast duck breast, coq au vin, mushroom risotto, pork tenderloin. Asian: Peking duck, char siu (barbecue pork), soy-glazed mushrooms, teriyaki salmon.


Production Method

Hand-harvested; partial whole-cluster pressing/fermentation (often high %); fermented in small vessels and matured 12–16 months in French oak (approx. 25–45% new).
