Tasting Note
Refined Puligny: citrus and white-peach fruit, sugared-almond and brioche notes, stony/flinty minerality, subtle vanilla/butterscotch from oak, bright chiselled acidity and a long saline finish.

Food Pairing
Western: scallops, lobster, sole meunière, roasted chicken with cream, Comté and other mild cheeses. Asian: sushi/sashimi, miso-glazed cod, steamed fish with ginger & scallions, tempura, Cantonese steamed white fish.

Production Method
Hand-harvested; sustainable viticulture. Cold settling, fermentation in oak barrels (estimated 20–30% new), malolactic fermentation, 12–18 months aging on fine lees with light bâtonnage.
