Tasting Note

Bright lemon and white flowers with pear, stone-fruit and beeswax; citrus pith and chalky minerality, rich mid-palate, buttery texture, lively acidity and a saline, persistent finish.

Western: roasted/poached shellfish, grilled lobster, roasted chicken, veal, mushroom risotto, soft cheeses. Asian: miso-glazed black cod, steamed fish with ginger & scallion, tempura, mild Thai green curry, sushi/ sashimi.


Production Method

Hand-harvested old-vine fruit; gentle pressing, 24h settling, barrel fermentation with bâtonnage every two weeks; ~40% new oak, aged ~10–12 months before bottling.
