Tasting Note
Bright red cherry, raspberry and wild strawberry with floral lift, earthy mineral undertones and gentle spice. Silky texture, refined tannins, fresh acidity and a savory, lingering finish.

Roast duck, pan-seared salmon, mushroom risotto, roasted chicken, beef carpaccio, aged Comté; Asian: Peking duck, char siu, miso-glazed salmon, teriyaki chicken, bulgogi, stir-fried shiitake with soy.

Production Method
Hand-harvested old-vine Pinot Noir; organic farming (Ecocert), whole-cluster fermentation with indigenous yeasts, minimal sulfur at bottling; aged ~18 months in used French oak barrels.
