Tasting Note
Fresh red cherry and raspberry with floral lift, forest-floor and subtle spice; fine mineral thread, silky texture and refined tannins, medium finish.

Food Pairing
Roast/seared duck, mushroom risotto, pork tenderloin, aged Comté; Asian: miso-glazed salmon, duck bao, pork belly, shiitake stir-fries.

Production Method
Hand-harvested, native-yeast whole-cluster fermentation, minimal SO2, aged ~18 months in used (old) barrels; no new oak, light filtration or fining.
