Tasting Note
Bright red fruits (redcurrant, strawberry), rhubarb and floral notes with earthy/mineral undertones, lively acidity and a tense, savory finish. Light–medium body, delicate spice and subtle oak.

Western: roast chicken, duck breast, mushroom risotto, pork tenderloin, charcuterie, grilled salmon. Asian: Peking duck, char siu or hoisin-glazed pork, miso-glazed aubergine, mushroom soba, yakitori (chicken skewers).

Production Method
Single‑vineyard Pinot Noir; fully destemmed or whole‑cluster versions exist; fermented with little-to-no added sulfur, 100% whole-cluster (vendange entière) for VV cuvée; aged ~18 months in used barrels, minimal new oak.
