Tasting Note
Bright red and black fruit (raspberry, blackberry), black pepper, mint and leather notes; medium-bodied, fresh acidity, silky tannins and a mineral, long finish.

Western: roasted lamb, grilled beef, pork shoulder, charcuterie, aged Manchego. Asian: Peking duck, Korean BBQ, char siu, spicy Sichuan dishes, teriyaki chicken.
Production Method
Spontaneous fermentation in stainless steel and concrete; aged in used 500L barrels and a 4,000L oak foudre for ~1 year; bottled Feb 2023.
