Tasting Note
Pale yellow; expressive aromas of white flowers, pear, green apple and white peach. Mineral-driven palate with creamy oak texture, balanced acidity, concentrated fruit and a long, saline finish.

Western: grilled salmon, butter-poached lobster, roast chicken, creamy pasta, aged cheddar. Asian: miso-glazed cod, tempura prawns, Thai coconut curry, richer sushi (otoro), dim sum.
Production Method
Barrel-fermented with ~50% spontaneous malolactic fermentation; aged ~10 months in French oak (≈19–20% new). Unfined before bottling.
