Tasting Note

Dense ruby with violet hues. Aromas of black cherry, plum, violets, cassis, tobacco and dark chocolate. Full-bodied, plush ripe fruit, firm chalky tannins, balanced acidity and a long savory finish.

Grilled ribeye, roasted lamb, braised short ribs, mushroom risotto; Korean BBQ (bulgogi), char siu, Sichuan beef, teriyaki beef, aged hard cheeses.


Production Method

Fermentation in stainless tanks with extended maceration; aged ~18 months in French oak (≈50% first-use); bottled unfined and unfiltered.
