Tasting Note

Dense black fruits (blackberry, plum, blueberry) with notes of licorice, thyme, black tea, tobacco and spice. Full-bodied, concentrated, velvety yet firm tannins and a long, menthol-tinged finish.


Food Pairing

Western: grilled ribeye, roasted lamb, beef short ribs, aged Manchego, mushroom risotto. Asian: Korean BBQ (bulgogi/galbi), Chinese char siu, Sichuan-style beef, teriyaki beef, miso-glazed eggplant.


Production Method

Hand-harvested; fermented with careful temperature control; aged 18 months in French oak (≈50–55% new); bottled unfined and unfiltered.

Chañares Estate (Los Árboles) is a high-elevation single vineyard (≈1,184 m) acquired by Paul Hobbs in 2013. Viña Cobos, founded 1999, focuses on terroir-driven Mendoza wines from stony alluvial soils and preserved native chañar woodlands.
