Tasting Note
Aromas of green apple, pear, dried pineapple, orange peel, green tea and white flowers with flinty, pie-crust and light vanilla notes. Palate is round and creamy with balanced acidity, pronounced minerality and a long, focused finish.

Western: roast chicken, lobster with butter, creamy pasta, seared scallops; Asian: miso-glazed black cod, tempura prawns, salmon nigiri, chicken katsu.
Production Method
Whole-cluster pressing; fermented in French oak foudres and small barrels (12–25 hL); 100% malolactic fermentation; aged ~10 months in French oak (≈25% new) on lees with periodic bâtonnage.
