Tasting Note
Deep red with black hues. Aromas of cherries, roasted red pepper, clove, menthol and pink pepper. Palate is balanced, juicy, complex with fine-grained tannins and a long, savory finish.
Food Pairing
Western: grilled lamb/chimichurri, roast beef, stuffed pasta, aged hard cheeses. Asian: Korean BBQ (galbi), char siu or hoisin pork, Sichuan pepper beef, miso-glazed eggplant, teriyaki duck.
Production Method
Hand-harvested (Mar 21–23, 2018). Fermented and matured 18 months in French oak (≈51–54% new). Bottled Nov 2019; unclarified and unfiltered.
