Tasting Note

Deep violet with concentrated black-plum, blackberry and fig, layered with cinnamon, clove, wild thyme, tobacco and dark chocolate. Dense, energetic, velvety tannins and a long mineral finish.

Western: grilled ribeye, roasted leg of lamb, beef short ribs, charred vegetables, aged Manchego or blue cheese. Asian: Korean BBQ (bulgogi/galbi), Cantonese char siu, Peking duck, spicy Sichuan beef or mapo tofu.
