Tasting Note
Pale yellow with green hues. Aromas of orange peel, green apple and white flowers. Crisp, energetic palate with bright acidity, mineral notes, subtle oak spice and a long, saline finish.

Western: roast chicken, seared salmon, creamy risotto, lobster with butter, mild soft cheeses. Asian: sushi/sashimi, ceviche, miso-glazed fish, Thai green curry (milder versions), grilled scallops with soy-citrus dressing.
Production Method
Hand-harvested fruit; 80% fermented in stainless steel, 20% fermented and aged in new French oak barrels (~10 months); ~20% malolactic fermentation in barrels; bottled unfined.
