Tasting Note

Dark ruby; aromas of blackcurrant, blackberry, pink pepper and sandalwood. Medium-full body with tight, polished tannins, cocoa and spice notes, balanced acidity and a long, savory finish.


Food Pairing

Western: grilled ribeye, roast lamb, braised short ribs, aged cheddar or blue cheese. Asian: Korean BBQ (bulgogi/galbi), Sichuan beef, char siu pork, beef ramen with spicy broth.


Production Method

Traditional red vinification with extended maceration; matured 18 months in French oak barrels (≈20% new). Unfined before bottling.
